Sugar Free Banana Muffins

These light and fluffy sugar free banana muffins have all of the flavor, but none of the refined sugar and naturally sweetened with just bananas.

Ingredients
 
 

  • 3 Bananas ripe
  • 1 cup All purpose flour
  • 1.5 cup Rolled oats
  • 1 teaspoon Apple cider vinegar
  • 1 pinch Salt
  • 1 tablespoon Baking powder
  • 1 Egg medium
  • 1 cup Skim milk
  • 1 teaspoon Vanilla extract
  • 2 tablespoon Coconut oil melted
  • 2 tablespoon Chia seeds

Instructions
 

  • Preheat your oven to 400°F/200°C/Gas 6.
  • In a large mixing bowl, mash 3 Bananas until smooth.
  • Add 1 cup Skim milk, 1 Egg, 2 tablespoon Coconut oil1 teaspoon Apple cider vinegar and 1 teaspoon Vanilla extract. Mix well to combine.
  • Add 1 cup All purpose flour, 1.5 cup Rolled oats, 1 pinch Salt, 1 tablespoon Baking powder and 2 tablespoon Chia seeds. Fold the dry ingredients into the wet ingredients (b).
  • Grease a 12 hole muffin tin and divide the muffin batter between the holes.
  • Bake for 20 minutes. Once cooked, remove from the oven and allow to cool before transferring to a wire rack.

Notes

  • Make sure you are using super brown bananas that have lots of brown spots on them. This will mean that they are really sweet and give you the sweetest no sugar banana muffins.
  • Make sure you mash the banana well. This will make sure that it is evenly distributed in the batter.
  • Make sure you sift the flour, so that there are no lumps in the batter.
  • To make these gluten free, use your favorite brand of gluten free flour, or swap it for almond or coconut flour.
  • If you want to make these a little more indulgent, then you can use some sugar free chocolate chips.
  • You could sprinkle some oats on top for presentation too.
  • For an added warm flavor, add 0.5 tablespoon of cinnamon to the mixture.
  • You can make mini muffins with this to make them baby banana muffins or toddler banana muffins.
