Ingredients

  • 2 Bananas
  • 0.5 cup Cashew butter
  • 1 Egg
  • 2 tablespoon Maple syrup
  • 0.25 cup Cocoa powder
  • 1 teaspoon Vanilla extract

Instructions

  • Preheat your oven to 400°F/200°C/Gas 6. Line a brownie tin with parchment paper.
  • Mash 2 Bananas in a large bowl.
  • Add 1 Egg and 1 teaspoon Vanilla extract.
  • Add 2 tablespoon Maple syrup, 0.5 cup Cashew butter and 0.25 cup Cocoa powder.
  • Mix well to combine.
  • Pour the batter into the lined tin.
  • Bake for 20 minutes. Remove from the oven, allow to cool and slice into squares.

Notes

  • To make these banana brownies more presentable, you could put a swirl of nut butter on the top of them.
  • Make sure to use really ripe bananas to make this. Ones that have a few brown spots on them (but not totally black), as this will give the sweetest brownies.
  • Let the chocolate banana brownies cool completely before cutting.
  • If you prefer a cakier brownie, then you could add a teaspoon of baking powder to the mixture.
