Chocolate Covered Blueberries

Dark Chocolate Covered Blueberries: a quick, tasty snack or dessert ready in under 10 minutes. Perfect for kids and easy to store in the fridge or freezer!

Ingredients
 

  • 0.5 cup (90 g) Chocolate chips dark; sugar free
  • 1.5 teaspoon Coconut oil
  • 1 cup (150 g) Blueberries

Instructions
 

  • Put 0.5 cup Chocolate chips and 1.5 teaspoon Coconut oil into a bowl. Microwave for 30 seconds at a time until it is all melted.
  • Add the melted chocolate to 1 cup Blueberries.
  • Mix well to coat all of the berries.
  • Use a spoon to lift out little piles of the coated blueberries (about 8-10 blueberries). Put onto a lined baking tray and refrigerate until set - about 30 minutes.

Notes

  • When you wash your blueberries, make sure to dry them well on a paper towel before putting them in the chocolate so that the melted chocolate sticks to the berries. Melted chocolate will seize if it comes into contact with water.
  • Each cluster will have around 8 blueberries in it to make it easy to hold.
  • if you want to make these all look a bit more uniform, then you can spoon the mixture into silicone cupcake cases.
