Cream Cheese Stuffed Dates

Medjool dates stuffed with sweet cream cheese make a delicious balance of rich, creamy, and naturally sweet flavors in every bite.

Ingredients
 

  • 10 Medjool Dates
  • 2 tablespoon Honey
  • 5 oz (140 g) Low fat cream cheese
  • 0.33 cup (40 g) Pistachios crushed

Instructions
 

  • Remove the seeds from 10 Medjool Dates. To do this, run a sharp knife along one half of the date. Open the date and pull out the seed.
  • Put 5 oz Low fat cream cheese and 2 tablespoon Honey into a bowl and mix well.
  • Divide the cream cheese mixture between the dates, spooning it into the cavity where the seed was.
  • sprinkle over the crushed pistachios.

Notes

  • Why not add a sprinkling of salt on top? It will really bring out the sweetness of the dates and honey in the cream cheese.
  • If your dates are too hard, you can soften them in the microwave for 10 seconds at a time, to make it easier to pit them.
  • You don't have to just put the chopped nuts on top, you can mix them into the cream cheese mixture as well to get lots of crunch throughout the cream cheese dates.
  • To make it easier to get the cream cheese filling into the dates, you can put it into a piping bag and pipe it in.
  • To add some extra color, why not add some freeze dried berries on top?
  • Make these cream cheese stuffed dates more indulgent with a drizzle of dark chocolate on them and then put in the fridge to set.
