    Dates are a must in any low sugar kitchen. They are naturally super sweet and the caramel texture is just like nothing else! Take them to the next level with these cream cheese stuffed dates. Juicy Medjool dates stuffed with a sweet cream cheese mix and topped with nuts.

    We LOVE dates and thankfully our kids love them too, which is great because they are a delicious and nutritious naturally sweet snack. Although we would happily just snack on them as they are, we are always looking for ways to change things up.

    These are like cheesecake dates and although they are really simple to make in just 5 minutes, they just feel like something a bit special. You can also make these cream cheese stuffed dates dairy free and vegan if you need to.

    Ingredients and Substitutions

    All the ingredients needed for this recipe each with a text overlay label.

    • Dates - You want to use Medjool dates for this recipe, as they are just the best. They are soft and super sweet and have a real caramel flavor. You can use other dates, but they won't be as soft. You can buy Medjool dates already pitted, or you can remove the pit yourself.
    • Cream cheese - Use the best quality cream cheese you can, as the cheaper variety tends to be too watery. We used low fat to keep these a light snack, but full fat will have more flavor and be creamier. You can also use goat cheese instead, and turn these into a delicious appetizer.
    • Honey - This is mixed in with the cream cheese for added sweetness. You could use maple syrup instead, or just leave it out if you didn't want any more sweetness than what comes from the dates.
    • Pistachios - These are the perfect topping to dates stuffed with cream cheese. SO good!

    Variations

    Cheese - Any soft cheese will work instead of the cream cheese. You could use goat cheese or ricotta. You could even add slices of Brie which would be really good to serve up at a dinner party. Impressive, but so simply to make.

    Toppings - We kept it simple with just some crushed pistachios on these dates with cream cheese. But any nuts or seeds will work. Don't over complicate it though, as these are meant to be simple.

    Vegan - To make these vegan, use a vegan cream cheese and swap the honey for maple syrup.

    How to Make Cream Cheese Stuffed Dates - Step by Step

    1. Step 1: Remove the seeds from the dates. To do this, run a sharp knife along one half of the date. Open the date and pull out the seed.

    1. Step 2: Put the cream cheese and honey into a bowl.

    1. Step 3: Mix well.

    1. Step 4: Divide the cream cheese mixture between the dates, spooning it into the cavity where the seed was.

    1. Step 5: sprinkle over the crushed pistachios.

    Storage

    Store: These stuffed dates with cream cheese are a great snack to have stashed in your fridge and they will keep in an air tight container for up to 4 days.

    We don't recommend putting the pistachios on top until just before serving as they will go soft in the fridge.

    Top Tips

    • Why not add a sprinkling of salt on top? It will really bring out the sweetness of the dates and honey in the cream cheese.
    • If your dates are too hard, you can soften them in the microwave for 10 seconds at a time, to make it easier to pit them.
    • You don't have to just put the chopped nuts on top, you can mix them into the cream cheese mixture as well to get lots of crunch throughout the cream cheese dates.
    • To make it easier to get the cream cheese filling into the dates, you can put it into a piping bag and pipe it in.
    • To add some extra color, why not add some freeze dried berries on top?
    • Make these cream cheese stuffed dates more indulgent with a drizzle of dark chocolate on them and then put in the fridge to set.

    Ingredients
     

    • 10 Medjool Dates
    • 2 tablespoon Honey
    • 5 oz (140 g) Low fat cream cheese
    • 0.33 cup (40 g) Pistachios crushed

    Instructions
