    These incredible Peanut Butter Stuffed Dates are a naturally sweet snack, and almost taste like a healthy snickers. Nutritious, delicious, and no added sugar - just the natural sugar from the dates.

    We love any kind of date snacks, as they have an incredible natural caramel flavor and there is so much that you can do with them. Dates with peanut butter are a winning combination, and they are easy to adapt with other nut butters and toppings.

    Quick and easy to make, with just 2 ingredients (dates and peanut butter), this Medjool date recipe is a real crowd pleaser and an amazing sweet fix if you are cutting out sugar.

    Why You'll Love Them

    • Quick and easy - You need just 2 ingredients to make peanut butter dates and they take less than 5 minutes to make.
    • Can be made in advance - You can batch make these and keep them in the fridge for an easy sweet treat.
    • Adaptable - You could keep the recipe as just the 2 ingredients, or you could adapt them with the additional toppings like we have.
    • Easy for kids to make - Kids will love stuffing these and topping their own.

    Ingredients and Substitutions

    • Dates - You want to use Medjool dates for this dates stuffed with peanut butter recipe as they are large and they have the best flavor. Known as fruit of the kings, they have a caramel flavor and a chewy texture.
    • Peanut butter - You want to use unsweetened natural peanut butter. Why not try making your own peanut butter by just blending peanuts until smooth. You can use any nut butter you like and we have given options below.

    Variations

    This is a really simple recipe, with just 2 ingredients so there isn't a huge amount you can adapt, but there are a couple of extras you can add in.

    Firstly, you don't have to use peanut butter. You can swap it for any nut butter like almond or cashew. For a nut free version you could use tahini or sunflower seed butter. Mix in a little cacao powder for a more Snickers like flavor.

    To make these look even more presentable, you could sprinkle a few extras on top. We went with some crushed almonds (but any nut will work) and some desiccated coconut.

    You could also sprinkle over some grated dark chocolate or even dip them whole into melted dark chocolate or drizzle over some melted chocolate.

    How to Make Peanut Butter Stuffed Dates - Step by Step

    1. Step 1: Slice the dates lengthways, but not all the way through. Remove the stone and discard.

    1. Step 2: Use a teaspoon to fill the dates with peanut butter.

    Top Tips

    • Make sure you only slice a little way into the date to remove the stone. Don't slice all the way through as you won't be able to stuff them.
    • We recommend putting the stuffed dates in the fridge for at least 30 minutes before serving, to allow them to firm up a bit.
    • About 1 teaspoon of peanut butter is enough to fill one Medjool date.
    • Look for fresh dates that are plump and have a nice glossy skin. They should be firm, but not hard. You will find them in the produce aisle with the fruit.
    • To make this date snack really taste like a Snickers, then stuff with peanut butter, dip in melted chocolate and then sprinkle over some crushed peanuts.

    How to store dates with peanut butter?

    We love to make a big batch of these, and luckily they store really well. Put them in an air tight container in the fridge and they will keep for up to a week.

    Can you freeze stuffed dates?

    Yes, these freeze really well and they make an amazing cold treat on a hot summers day. Put them on a tray and into the freezer for an hour to firm up. You can then transfer them to a freezer bag, where they will keep for up to 3 months. Then you can just grab them as and when you want one.

    Are peanut butter stuffed dates vegan?

    Yes, this is a vegan recipe. Make sure to use a vegan chocolate if you are using that as an additional topping.

    Can I use other dates to make these?

    You can, however they are much smaller and they don't have the same flavor.
