Peanut Butter Stuffed Dates

These incredible Peanut Butter Stuffed Dates are a naturally sweet snack, and almost taste like a healthy snickers.

Ingredients
 

  • 8 Medjool dates
  • 0.25 cup (65 g) Peanut butter

Instructions
 

  • Slice 8 Medjool dates lengthways, but not all the way through. Remove the stone and discard.
  • Use a teaspoon to fill the dates with 0.25 cup Peanut butter.

Notes

  • Make sure you only slice a little way into the date to remove the stone. Don't slice all the way through as you won't be able to stuff them.
  • We recommend putting the stuffed dates in the fridge for at least 30 minutes before serving, to allow them to firm up a bit.
  • About 1 teaspoon of peanut butter is enough to fill one Medjool date.
  • Look for fresh dates that are plump and have a nice glossy skin. They should be firm, but not hard. You will find them in the produce aisle with the fruit.
  • To make this date snack really taste like a Snickers, then stuff with peanut butter, dip in melted chocolate and then sprinkle over some crushed peanuts.
