Ingredients and Substitutions
A full ingredients list, along with US Customary and Metric measurements, can be found in the recipe card at the end of this post.
- Chocolate - We always use these Refined Sugar Free Dark Chocolate Chips. The flavor is SO good and they have the best ingredients we have found of any dark chocolate chips.
- Coconut oil - This is optional, but we find that it helps the chocolate chips to melt better and gives the chocolate covered berries a glossier finish.
- Blueberries - Try to find fairly small blueberries, rather than the jumbo ones, as they will all stick together better.
Variations
Fruit - Blueberries work well here, as they are soft, but they hold together well. You could use diced strawberries and raspberries, but they are softer so will go a bit mushier. Small chopped apples are really good in chocolate clusters too.
Crunch - To give these a different texture, you can add some crunch with either mixed seeds or some quinoa puffs which also adds some extra protein to this chocolate covered blueberries recipe.
Flavor - To change the flavor up, why not add some vanilla extract or even orange or mint extract as they go really well with chocolate.
Coconut - Once you have put them on the baking tray, before the chocolate sets, why don't you sprinkle some desiccated coconut on top? This makes them look really nice.
How to Make Chocolate Covered Blueberries - Step by Step
- Step 1: Put the chocolate and coconut oil into a bowl. Microwave for 30 seconds at a time until it is all melted.
- Step 2: Add the melted chocolate to the blueberries.
- Step 3: Mix well to coat all of the berries.
- Step 4: Use a spoon to lift out little piles of the coated blueberries (about 8-10 blueberries). Put onto a lined baking tray and refrigerate until set - about 30 minutes.
Dark Chocolate Covered Blueberries Storage
Store: You can keep these in an airtight container in the fridge for up to 5 days.
Freeze: We like keeping some in the freezer for a healthy frozen treat. They will keep in there for about 2 months. Just take them out of the freezer for about 5-10 minutes before eating to make them easier to bite in to.
Top Tips
- When you wash your blueberries, make sure to dry them well on a paper towel before putting them in the chocolate so that the melted chocolate sticks to the berries. Melted chocolate will seize if it comes into contact with water.
- Each cluster will have around 8 blueberries in it to make it easy to hold.
- if you want to make these all look a bit more uniform, then you can spoon the mixture into silicone cupcake cases.
Frequently Asked Questions
Yes, you can. Microwave it for 30 seconds at a time, stirring each time until fully melted. It can burn easily when melting though, so keep an eye on it.
No, we wouldn't recommend using frozen blueberries because they can become mushy in the melted chocolate once they defrost.
