Ingredients and substitutions
- Flour - We used all-purpose flour. You could use half all-purpose and half whole wheat flour, but that does make the sugar free banana muffins more dense. If you are following keto, then you can use coconut or almond flour instead.
- Oats - This makes these banana muffins heart-healthy and adds some extra fibre too. Use rolled oats rather than quick cook.
- Vinegar - This might seem like a strange addition, but just 1 teaspoon of apple cider vinegar will help elevate the natural sweetness and also react with the baking powder to help it rise.
- Salt - A pinch of salt really brings out the other sweet flavors.
- Baking powder - This helps the muffins to rise and make them nice and fluffy.
- Egg - We used a medium sized egg. Using a large egg can change the consistency.
- Milk - We used skim milk, but any milk will work. You could even use a plant based milk like almond milk or oat milk.
- Vanilla - This adds a nice warmth and helps to bring out the sweet flavors too.
- Coconut oil - This is used instead of butter. You could use vegetable oil instead.
- Bananas - This is the star of the muffins and where all the natural sweetness comes from. You want to make sure that you are using very ripe bananas, that have black spots on it.
- Chia seeds - These are an easy way to add some extra nutrition to the muffins. You could use flax seeds too.

How to make Sugar Free Banana Muffins - Step by step
Prep: Preheat your oven to 400°F/200°C/Gas 6.
One: In a large mixing bowl, mash the bananas until smooth.
Two: Add the milk, egg, coconut oil, vinegar and vanilla (a). Mix well to combine (b).
Three: Add the flour, oats, salt, baking powder and chia seeds (a). Fold the dry ingredients into the wet ingredients (b).
Four: Grease a 12 hole muffin tin and divide the muffin batter between the holes.
Five: Bake for 20 minutes. Once cooked, remove from the oven and allow to cool before transferring to a wire rack.
What to serve with Sugar Free Banana Muffins
We would happily eat these by themselves, however if you did want to serve them with something then you could slice them open and spread on some homemade peanut butter or sugar free Nutella.
For a healthy breakfast, you could serve these with some Greek yogurt and fresh berries.
If you are looking for an afternoon pick-me-up, then warm one of these in the oven or microwave and have it with a hot drink like a chai latte.
Storage
Store: Firstly you need to make sure that these muffins are fully cooled. Then you can line a storage container with a paper towel and put the muffins in a single layer. Put another piece of paper towel on top of it and put the lid on. These will then keep at room temperature for 4 days.
Freeze: To freeze these sugar free banana muffins, individually wrap them and then put them in a freezer bag for up to two months.
Defrost: You can defrost these at room temperature.
Reheat: Warm these healthy muffins up in the microwave for 30 seconds.

To make these low sugar banana muffins dairy free, then use a plant based milk.
To make these egg free, swap the egg for a flax egg, or you could double the coconut oil.
The key to getting moist muffins is firstly not over mixing the flour - you just need to gently fold it in other wise they will be too dense. Also, don't bake them too long otherwise they will be dry. Every oven cooks things differently.
Whilst we love having bananas in the freezer for making smoothies with, they don't really work in this no sugar banana muffin recipe. They lose a lot of moisture when they have been frozen and the flavor changes too much for them to work in muffins.
